Coffee Macarons – Delicate French macarons with coffee

For the macaron shells:

  • 1 cup powdered sugar
  • ¾ cup almond flour

For the coffee filling:

  • ½ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tablespoon instant coffee granules
  • 1 teaspoon hot water
  • 1 teaspoon vanilla extract

How To Make

Step 1: Prep Work

Start by lining a baking sheet with parchment paper. Next, you’ll want to sift together the powdered sugar and almond flour into a large bowl. This will help the macaron shells come out smooth.

Step 2: Whip the Egg Whites

In a separate bowl, whip the egg whites until they’re foamy. Add the granulated sugar slowly while continuing to whip. Keep whipping until you get stiff peaks. This means the mixture should hold its shape when you lift the whisk.

Step 3: Fold in the Dry Ingredients

Gently fold the almond flour and powdered sugar mixture into the whipped egg whites. Be careful not to overmix. You want the batter to be smooth and shiny, but not runny.

Step 4: Pipe the Macarons

Spoon the batter into a piping bag with a round tip. Pipe small circles onto the prepared baking sheet. Let the macarons sit out for about 30 minutes to an hour. This helps them form a skin, which is important for that signature macaron texture.

Step 5: Bake the Macarons

Preheat your oven to 300°F (150°C). Once ready, bake the macarons for 15-18 minutes. You’ll know they’re done when they easily lift off the parchment paper. Let them cool completely before removing them from the sheet.
