- Prep the Pork: Start by trimming any excess fat from the pork shoulder. Cut it into 4 large chunks.
- Mix the Sauce: In a bowl, combine the brewed coffee, chicken broth, brown sugar, soy sauce, tomato paste, Worcestershire sauce, smoked paprika, cumin, black pepper, and salt. If you like a bit of spice, add the red pepper flakes.
- Layer in the Slow Cooker: Place the chopped onion and minced garlic in the bottom of the slow cooker. Arrange the pork chunks on top.
- Add the Sauce: Pour the coffee mixture over the pork in the slow cooker.
- Cook: Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.
- Shred the Pork: Once cooked, remove the pork from the slow cooker and shred it with two forks.
- Finish the Sauce: If you want a thicker sauce, pour the liquid into a saucepan. Simmer it on the stove over medium heat for about 10 minutes, or until it reduces slightly.
