- Beat the Egg Yolks and Sugar: While the milk is warming up, grab a bowl and whisk together the egg yolks and sugar. Keep whisking until the mixture turns pale yellow and looks smooth.
- Temper the Eggs: Now, slowly pour a little of the warm milk mixture into the egg yolk mixture. This is called tempering. It keeps the eggs from cooking too fast. Stir constantly as you do this.
- Combine the Mixtures: Pour the egg mixture back into the saucepan with the rest of the milk. Stir it all together over medium heat. Keep stirring until the mixture thickens. This should take about 5-7 minutes. Don’t let it boil, or the eggs might scramble.
