Coffee Granola

I’m excited to share my favorite granola recipe with you. This Coffee Granola is a crunchy mix with a hint of coffee flavor.

It’s perfect for breakfast or a quick snack. Let’s dive in!

Ingredients You’ll Need

  • 2 cups old-fashioned rolled oats
  • 1 cup nuts (like almonds or walnuts), chopped
  • 1/2 cup coffee grounds (freshly brewed coffee is best)
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil or butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup dried fruit (like raisins or cranberries)

How To Make

  1. Preheat Oven: Start by heating your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a large bowl, combine the oats, chopped nuts, and coffee grounds. Stir well.
  3. Heat Wet Ingredients: In a small saucepan, melt the coconut oil (or butter) over low heat. Add the honey (or maple syrup) and vanilla extract. Stir until everything is well mixed and smooth.
  4. Combine: Pour the wet mixture over the dry ingredients. Mix until all the oats and nuts are coated.
  5. Spread and Bake: Spread the mixture evenly on a baking sheet. Bake for 15-20 minutes, stirring halfway through, until it’s golden brown and crunchy.
  6. Cool and Add Fruit: Let the granola cool completely on the baking sheet. If you’re using dried fruit, mix it in once the granola is cool.
  7. Store: Store your Coffee Granola in an airtight container. It should stay fresh for up to two weeks.
